Turkey Rollovers – a recipe

Simple, delicious, healthy and cheap.

What you need (for two people) :

4 turkey breast slices
50 gr. diced mortadella
50 gr. diced cheddar or emmanthal cheese
olive oil
salt
pepper
oregano

How you do it:

On the turkey slices (well flattened), lay down a mix of mortadella and cheese cubes. If you don't like or you can't find mortadella, you may replace it with diced light fried bacon. Seal the meat around the filling, using toothpicks (ensure you remember how many you put per each roulade, to avoid later accidents!). Settle your roulades in a pirex tray, sprinkle with salt, pepper and oregano, and oil.
Put in a pre-heated oven at 180C and turn the roulades around half way through. In total it shoudl take around 20 minutes, depending on the thickness of the meat.
They are delicious accompanied by white wine and roasted friggitelli (small, sweet, green peppers) seasoned with a drop of raw olive oil.
